Vanishing Oatmeal Raisin Cookies (As Enul's Requested)


This recipe is taken from the Quaker Oats' lid, but I changed the measurement a bit because we like the cookies to taste less sweet. To compensate that, I added more raisins/ dry cranberries to the ingredients. Here's my measurement:

1/2 lbs salted margarine/butter, softened (I prefer to use butter since margarine contains hydrogenated oil which can increase LDL/'bad' cholestrol)
1/2 cup brown sugar
1/2 cup granulated sugar 2 eggs 1 tsp vanilla extract 1 cup all-purpose flour (add some more up to 1 1/2 cup if the mixture is too mushy)
1 tsp baking soda 1 tsp cinnamon powder 3 cups uncooked Quaker Oats (I used quick, but old fashioned works too)
1 1/2 cup raisins

Methods:

1. Beat together butter, brown sugar and granulated sugar until creamy
2. Add eggs and vanilla extract; beat well
3. Add combined flour, baking soda and cinnamon powder; mix well
4. Stir in oats and raisins; mix well
5. Heat oven to 350 degree F (about 180 degree C)
6. Put a layer of parchment paper/wax paper/cookie sheet on the cookie tray
7. You can use a tablespoon, or an ice cream scoop to scoop the mixture and drop it onto ungreased parchment paper
8. Make sure the distance between each scoop is approximately 1 1/2 inches
9. Bake 10-12 minutes or until golden brown
10. Let it cool for a minute, then remove to wire rack/cooling rack
