Resepi Ayam Percik (My Own Version)



I just cooked ayam percik for dinner. Sangat2 la sedap hehehe. Here's the resepi (atas permintaan Janet)

Ingredients (for 1 whole chicken cut into 10-12 pieces):

1 whole onion (if the onion is small, use 1 1/2 onion)
3-4 cloves garlic
1/3 cup of coconut milk
1 inch ginger
2 lemon grass
1/2 inch galanghal (if you don't have this, just add some more lemon grass/ ginger)
1 tsp corriander
1/2 tsp cumin
some sambal olek (ikut citarasa)
1 can (8 oz) tomato sauce
some salt and brown sugar (ikut citarasa)
some rice flour

Methods:

1. Just blend everything except the rice flour. (Of course you need to cut the onion, garlic, lemon grass etc into small pieces first).

2. If you are not sure how much brown sugar/ salt/ sambal olek to put, make sure to taste it a little bit before you marinate the sauce with the chicken. It should taste sweet (and pedas, kalau nak pedas), masin sikit2 je.

3. Nak marinate overnight pun boleh, nak marinate for a few hours/ an hour pun boleh. Takde hal, but of course lagi lama marinate lagi sedap.

4. Then pour everything into the pot, wait until almost cook. (You can check the drumstick, if you see the blood coming out of its bone, that means you need another 10 mins. Anyway, just make sure it's not over cook)

5. Coat the baking pan with a layer of oil (vegetable oil/ olive oil), then put the chicken into a single pile. Make sure that you shake the extra sauce off the chicken before putting it on the baking pan.

6. Then broil the chicken in the oven until it turns brownish on both sides (kena terbalik2kan la)

7. Now for the extra sauce, just cook it on the stove some more. To make the sauce thick, add some rice flour (yg dah dilarutkan dlm air) bit by bit. Then stir the sauce. You can also add salt/ brown sugar/ sambal olek (ikut citarasa).

8. Then pour the sauce onto the ready to serve chicken.

Last tips: I usually serve this chicken with nasi oren. Baru sedap sikit mkn :)
Nasi oren tu, color dia oren because I put some paprika powder. Also add some margerin stick (biar jd ala2 nasi minyak), some chopped onions, cinnamon stick, bunga cengkih and bunga lawang, and some salt.
